Milca: Digital Marketing Specialist

What’s the first thing you do when you get into bed?

It used to be to pass out, but now that I have a kitten, it’s to pull back the comforter so that when he decides to snuggle with me in the middle of the night he can lay in the crook of my arm.

What are your rules about eating in bed? Do you ever eat in bed?

I’m a messy eater so I have learned to not eat in bed unless I want to be poked by crumbs as I’m trying to sleep.

What’s your favorite bed style? (Platform, storage, sleigh, daybed, etc.) Why?

Milca loves the storage in the footboard drawers!

I really like platform beds. They are usually chic with clean lines and a minimal design which is up my style alley. They are also lower to the ground which is great for me since I’m 5’1” – I don’t have to climb into bed every night. They are typically still tall enough though where my kitten has a place to hide (or surprise attack from). Can you tell I’m obsessed with my kitten?

What do you currently store under your bed?

We currently have a storage bed and it has drawers. My drawers hold my workout clothes and pajamas. Sometimes my kitten stores himself under the bed.

What’s your favorite meal of the day?

Dinner – because I like to experiment with dinner foods.

What’s your favorite breakfast food?

I crave pancakes often, but I think biscuits and gravy are the first thing I look for in a breakfast menu.

What’s the strangest thing you’ve ever eaten for breakfast?

Probably Spam, by accident.

Debra: Director of Marketing

What’s the first thing you do when you get into bed?

I adjust my body to accommodate where Bela, our dog, wants to snuggle up to me at that time.

What are your rules about eating in bed? Do you ever eat in bed?

We don’t have any rules about eating in bed, but I never do. I prefer to eat at a table or on the couch in front of the TV (though I should not admit it).

What’s your favorite bed style? (Platform, storage, sleigh, daybed, etc.) Why?

I tend to like platform beds because I like the simple, modern style of them.

What do you currently store under your bed?

There is nothing stored under our bed.

What’s your favorite meal of the day?

I like every meal – breakfast, lunch and dinner. But my favorite kind of food is breakfast food. I can happily eat it for all meals.

What’s your favorite breakfast food?

Johnny cake, then French toast, then scrambled eggs (I could go on).

What’s the strangest thing you’ve ever eaten for breakfast?

I can’t think of anything very strange that I have eaten for breakfast, but my husband eats a bowl of raw spinach for breakfast nearly every morning.

Gwen: Bookkeeper

What’s the first thing you do when you get into bed?

The first thing I do when I get into bed is fluff up my pillows. Then I tuck myself under my quilt, grab my kindle and unwind while going through my Facebook page. I like to check in with my family in Canada. Sometimes I will research Pinterest for healthy recipes or crocheting ideas but mainly I check in on my family.

What are your rules about eating in bed? Do you ever eat in bed?

I generally don’t allow eating in bed, but popcorn and ice cream are exempt from this rule.

Has anyone ever made you breakfast in bed?

I have had breakfast in bed only a few times in my life. My children made me breakfast in bed for Mother’s Day when they were younger but now that they are older, they would rather take me out for breakfast.

What’s your favorite bed style? (Platform, storage, sleigh, daybed, etc.) Why?

My favorite bed style is the sleigh bed. I like the sleek curvature design of the sleigh bed. It reminds me of the roman era which is one of my favorite time periods.

What do you currently store under your bed?

Currently, I store all the clothes that don’t fit me anymore because the little gremlins in my closet keep making them smaller. I keep telling myself that one day, those gremlins will make them bigger again but to no prevail so far.

What’s your favorite meal of the day?

My favorite meal of the day is breakfast.

What’s your favorite breakfast food?

My favorite breakfast food is eggs benedict. I judge breakfast places on how good their eggs benedict is. If I love it, I will be back again.

What’s the strangest thing you’ve ever eaten for breakfast?

The strangest thing that I have ever eaten for breakfast would be chocolate cake. When I go to Disney World with my father-in-law, we have a tradition to eat a piece of chocolate cake with chocolate milk for breakfast on our last morning there.

  • ¼ teaspoon salt
  • ¼ cup shortening
  • 1 egg

  1. Bake in greased 8×8 pan at 350 degrees for 35 minutes.
  2. Serve with butter and syrup. Other common toppings include apple sauce gravy or venison stew.
Mennonite Johnny Cake
Mennonite Johnny Cake

This is a traditional breakfast meal of the Mennonite community in Lewis County, New York. It provided a hearty meal before a day working in the fields or milking cows.

The challenge with the Johnny cake recipe is the “milk until smooth” part. While my batter was smooth, it was still too thick. Johnny cake should rise higher and have more moisture than mine did.

Refreshing Parfait

Recipe from amish365.com.

Ingredients:

Refreshing Parfait
Parfait prep.
  • 5 cups granola cereal or crushed Oreo cookies mixed with ¼ cup melted butter
  • Layer into a 2-quart serving bowl or in individual cups
  • Yogurt layer:
    • 4 ounces cream cheese
    • ½ cup powdered sugar
    • 4 cups vanilla yogurt
    • 16 ounces whipped topping
    • Fresh fruit of your choice

Instructions:

  1. Cream together cream cheese and powdered sugar, add yogurt and whipped topping. Layer on top of granola or crushed cookies then top with your choice of fresh fruit. I’m a fruit lover so I like piling mine with lots of it. My mother used strawberries, grapes, blueberries, and peaches.
  2. Note: I prefer using whipped cream instead of whipped topping or using only half of the topping to cut back on sugar.

I used kiwi and raspberry on these, but you can use whatever fruit you like.

Rating the Recipes

We had our breakfast panel rate the Amish breakfast recipes from 1 to 5 with 5 being the tastiest.

Breakfast Casserole

Milca: I give it a 5. I’m going to open up my storage bed to get some more. My first thought was, my parents are coming to town, I’m going to make this for them.

Debra: I give it a 5. I like the combinations. It’s hearty. But, if you sit at a desk all day, you should not have this every morning.

Gwen: I give it a 5. It’s really good.

Overall Score: 5

Mennonite Johnny Cake

Milca:  Tastes almost like Bisquick. It has a light sweetness to it. With butter and syrup on it, that gives it a little oomph. 4

Mennonite Johnny Cakes

Debra: The flavor is pretty close. (Debra grew up eating this and has made Johnny cake many times.) If there was more milk, it would be fluffier and taller. I love the taste because I grew up eating it! It tastes like home. I would give this a 3, because it is drier than it should be.

Gwen:  I think it is good. I give it a 4.

Refreshing Parfait

Milca:  It’s definite 5. It’s so delicious. I don’t know what’s in this. I’m gonna have some more.

Debra: I think I’m gonna give it a 4. I like the taste, but if you’re not thinking ahead, the bottom part is kind of dry on its own.

Gwen: I love the fluff. I’m gonna give it a 5. I love kiwi and granola.
